Osso Bucco translates as Bone with a Hole. It is a Venison Shank cross cut with a marrow bone in the middle. Combine this with country vegetables and herbs, red wine, juniper berries and red currants, and slowly roast so the marrow melts into the already rich stew to add a depth of flavor.
